After thorough cellaring (perhaps seven to ten years) the wine’s skeleton softens and the multiplicity of flavors become more lucid. It will always remain a masculine wine, neither as sophisticated as Cote Rotie nor as lush as Hermitage. Its ruggedness notwithstanding, Cornas ends a meal like no other. Strong cheeses and aggressively sauced red meats find perfect harmony with mature examples. Additionally, it usually costs 30 – 50% less than Hermitage; few wines are as prone to be cellared in its price range.
