NV       Crémant de Bourgogne Blanc de Blancs, Aegerter, Burgundy

The Blanc de Blancs is fragrant with white blossom, citrus or green apple. Over time, the aromas will evolve to take on notes of stone fruit such as apricot and peach.   Made entirely from Chardonnay, this type of classic Sparkling wines can be enjoyed very cold or just chilled to about 10C. 

NV       Crémant de Bourgogne Rose, Aegerter, Burgundy

The Crémant de Bourgogne Rosé, made from Pinot Noir grapes with or without the addition of Gamay, is resplendent in its robe of pink-tinged gold. This is a delicate wine with subtle aromas of red fruit. It would make the ideal accompaniment for smoked salmon, a fillet of turbot or a dessert.

Still one of the best kept secrets in Sparkling wines, a Cremant de Bourgogne is a connoisseur’s choice.  Made pretty much exactly the same as the higher-priced Champagne, these Champagne-like sparkling wines hardly make it out of Burgundy, let alone France or Europe.  2003 was famous for the killer heat wave that produced unprecedentedly ripe grapes, probably contributing to the creamy, rich flavors of this dry sparkling wine.  This deep, classy, full-bodied sparkling wine can be most enjoyable with caviar, salads, lobsters and other shellfish.

NV       de Sousa, Champagne

Erick de Sousa’s respect for the land extends past sustainable farming into the winery where a minimum-intervention winemaking philosophy is practiced.  50-year-old vines produce grapes with intense flavors.  This Brut Champagne is a blend of 50% chardonnays, 40% Pinot Noir and 10% Pinot Meunier.  It is very harmonious, has a silky texture that highlights its mellow personality, hiding its underlying power.  Scents of ripe pear and brioche make it an attractive choice for an aperitif also but many will order this classic Champagne to enjoy with a nice fish.

A superb classic handcrafted Champagne with the traditional blend of Chardonnay, Pinot Noir and Pinot Meunier; thin bubbles lead to fruit flavors, a mouth feel that is round and fresh, a wine appreciated for its finesse and vigor, not only a great "party" wine but one that is well received on the dining table, enjoyed with salads, shellfish, sushi and sashimi also.

NV       Laurent Perrier, Brut, Champagne

A lighter house style Champagne made from Chardonnay and Pinot Noir. Subtle citrus, toast and spice predominate this perfectly balanced Champagne, with a strong structure; a good wine with food.

NV       Pommery, Brut Rose, Champagne

Brut Rosé is produced according to the same principles of blending as all the other Pommery Champagnes. But its color comes from a lightly crushed and vinified Pinot Noir, specially selected in the Pommery vineyards for its maturity. Blended with other Pinot Noir crus (more than one-third), Meunier and Chardonnay and vinified in the traditional method, it acquires its subtle rose color and fruity character in aging.

NV       Cava Artelatino Brut Metodo Tradicional, Spain

One of the better Cava’s made in the traditional "Champagne" method of bottle fermentation instead of mass produced in a tank before bottling, a good aperitif, cocktail and not bad with salad, appetizers and nice cheese-based soufflé.
