Try it with appetizers or as an aperitif. Gavi is also great with fried fish, especially fried calamari.

Grüner Veltliner, from Austria, has recently become a darling of top American sommeliers after decades of obscurity outside of Austria. It likely owes its success to its fantastic pairing abilities. A refreshing, medium-bodied, peppery white wine with stone fruit flavors, Grüner Veltliner goes with everything from green salads to cold poached salmon to roasted chicken. The best Grüners can be quite expensive and have enormous aging potential.

This estate situated just outside of the Wachau, is probably the No 1 domaine in all of Austria. Here Grüner Veltliner and Riesling are still kings. Weingut Bründlmayer is situated in Langenlois, some 70 km north-west of Vienna, upstream along the Danube in the Lower Austrian Kamp Valley. The wooded hills of the Waldviertel protect the vineyards from the cold north-westerly winds. During the day, the sun warms the stony terraces, while at night the fresh, fragrant forest air drifts through the Kamp Valley into the Langenloiser Arena. These wines are dry, mineral, powerful and well balanced.
