Whites that seem too acidic when young can, with age, come into balance, revealing hints of apples and pears, nuts and buttered toast.
But salting away wine isn’t only about serious laying down; it’s also great to have a selection of drink-now wines at the ready, so you can always find the right bottle for you dinner or to take to a friend’s house.
