Philosophy of Wine List
Just as restaurant guests have a right to enjoy food that is not practical to prepare at home, extending that to wine, they should be able to order wines that are not available in ordinary wine shops. A true “wine restaurant” should be responsible for cellaring its wine until it is time to drink them.
Storage and Ageing
Yats Restaurant cellars and ages its own wine. 90% of the collection is sourced directly. The 30000-bottle inventory is stored in several 24-hour temperature-controlled cellars. Two walk-in cellars are located inside the premise of the restaurant. These two cellars contain roughly 8000 bottles. A 2-storey independent building with 1000 square meters of temperature-controlled cellar space houses the rest of the bottles.
The 2700-line Wine List contains wine from all wine regions in the world, even those that are less well known but equally interesting. Of special interest and particular excellent value for money are the old vintages of less well-known names from Bordeaux and Burgundy, commonly referred to as connoisseurs’ choices because these names usually attracts only the more knowledgeable wine lovers. Most of the wines are not available anywhere else in the country.
