What is the difference between a Vintage Beer (VB) and an ordinary strong beer?
Just as most wine is made to be drunk right away, so are most ordinary beers. Fine vintage wine improves with age. Likewise for these great vintage beers, although very delicious when young, they will improve significantly after a few years of age.
After undergoing extended re-fermentation in the bottle, VBs continue to improve inside the bottle for as long as 15 years depending on their styles and alcohol strengths. The taste of matured vintage beer is very different from ordinary strong ales. A 3-year-old VB for example already has a fascinating aroma, a wonderfully rich taste and a full body.

How does a Vintage Beer improve with age?
Bottle re-fermentation gives the VB its complexity which cannot be achieved with a normal one-shot fermentation. As the yeast feeds on the residual sugars in the beer, the beer loses some of its body and becomes dryer. Even after the yeast runs out of sugar to feed on it contributes to beer’s body, aroma and flavor profile. One of the main flavoring ingredients – hop – carries certain bitterness that mellows down after a few years of ageing allowing the VB to become balanced and round.
Because VBs are fermented on lees, there is a deposit of the yeast in the bottle and they are partly filtered. Ageing potential for VB varies according to their structure and composition. High alcohol content protects the beer against negative effects of bacteria. With as much as 11% in Alcohol-By-Volume (ABV), a VB can easily age for 15 years. If well kept, they can easily preserve if not improve for another decade or more.
What exactly is “Bottle Re-fermentation”?
Fermentation is the transformation of sugars by micro-organisms – yeast – to yield alcohol. This process takes place in big tanks, called fermentation tanks. VBs undergo another round of fermentation not in these tanks but inside the bottles, hence the term bottle re-fermentation (or sometimes called bottle conditioning).
Yeast is added during bottling to provoke re-fermentation inside the bottle. The yeast that is kept in the bottle provides a good source of vitamin B which gives the VB a very special aroma. Since it is re-fermented in bottles, like Champagne, there is no oxidation because the yeast that eats the sugar also eats up the oxygen. This preserves the freshness of VB while it ages for many years.

How do I cellar my Vintage Beers?
Keep your VBs like you would for your vintage Champagne and Sparkling wine. Ideally, you should lay them on their sides in a cool cellar totally away from any direct contact with sunlight. That’s easy if you happen to own a chateau in Bordeaux with a cave the size of a tennis court. For some of us who might have to cut a few small corners, the good news is that VBs are incredibly resilient to oxidation. If you can avoid sharp intraday temperature fluctuation and direct contact with sunlight, lay them down on their sides and they will mature nicely for many years.

Nanay Gov endorses Jamby senatorial bid
CITY OF SAN FERNANDO– Gov. Lilia Pineda endorsed yesterday the candidacy of former Senator Jamby Madrigal who is running again in the Senate during the Provincial Peace and Order Council (PPOC) meeting attended by some 505 village chiefs at the Bren Z. Guiao Convention Center, this city.
Pineda described Madrigal as an original Cabalen among the senatorial candidates who are claiming to have Kapampangan blood.
The formal endorsement was done after Madrigal graced the commemoration of the death anniversary of her grandfather–Kapampangan national hero Jose Abad Santos held at the provincial Capitol compound.
“She is an original Kapampangan. Her grandfather had shown us the real meaning of patriotism. Let’s help in reviving another Abad Santos in the government service,” Pineda said.
The governor also noted the advantage of having Madrigal in the upper house. “We need to support our Cabalen to ensure more projects and programs in the province. For sure she will not disappoint the Kapampangans,” she said.
Former Senator Madrigal in her message delivered in Kapampangan said she is a full-fledged Kapampangan by heart and by blood.
“I am proud to be a Kapampangan because we are identified for being brave and willing to sacrifice everything for principle,” Madrigal told the crowd of village chiefs who attended the Provincial Peace and Order Council meeting.
She also lauded the administration of Gov. Pineda in the province.

CITY OF SAN FERNANDO–Twenty-six young ladies and men will vie for this year’s Lakan and Mutya ning San Fernando, the 2013 Executive Committee of the “Pyestang Fernandino” announced yesterday.
The presentation of the candidates for the annual Lakan and Mutya event coincided with the unveiling of the calendar of activities of the fiesta celebration.
Michelle Ong, this year’s chairperson of the Fiesta celebration, said the candidates came from the different barangays in the city.

Kambilan leader killed
SAN SIMON, Pampanga–A Kambilan leader on Saturday was shot and killed point blank by two unidentified motorcycle riding suspects (MRS) along Barangay Dela Paz here, a belated police report yesterday said.
Newly installed Pampanga police director Senior Supt. Oscar Albayalde identified the victim as Marciano Intal, 63, a former Barangay Chairman of Dela Paz here.
Investigations revealed that on Saturday while Intal was talking to a certain Alex Sanga at the waiting shed of Dela Paz Elementary School, two suspects on board a blue Enduro motorcycle with improvised plate number suddenly shot the former at point blank which resulted to his death.
According to police, the suspects fled towards the direction of San Luis town.
Intal, police said, was brought to Manabat Hospital but was pronounced dead on arrival.
In an interview, one of the barangay chairmen here said members of the ruling political party Kambilan are the ones who are being harassed and killed in the province.

IBP Pampanga condemns lawyer ambush
CITY OF SAN FERNANDO–The Integrated Bar of the Philippines (IBP) condemned in the strongest possible term the senseless act of violence committed against Attorney Ryann Rueda the other day, Attorney Peter Paul Maglalang, IBP president Pampanga chapter, said that Rueda sustained two gun-shot wounds in his body while driving his car along Barangay Parian in Mexico town.
Maglalang said, immediately after the incident, Rueda was taken to the Mexico Community Hospital but was eventually brought to another hospital somewhere in this city.
“He is now conscious, but he cannot yet elaborate further what happened,” said Attorney Gener Endona, Rueda’s law firm partner in Mexico.
Maglalang said the officers and members of the IBP –Pampanga urged the investigators and police authorities to resolve the case with dispatch and bring perpetrators to justice, especially the brains behind the brazen attack to Rueda as soon as possible.
“We would like to stress that the lawyers will not be intimidated by this attack against our brother in profession. We will remain steadfast in representing our clients with the same degree of zeal and courage,” Maglalang said.
Endona said he believed that the incident is not election related as their law firm advised them to refrain from participating in partisan politics.
He also said that it’s a remote possibility that it’s a case related because they do not know even a single sensationalized case of Rueda.
Asked if it’s a crime of passion, “Puede, kasi pogi siya (Rueda),” Endona said.
Endona, for his part, said they encouraged all possible witnesses to the incident to cooperate with the investigators for the prompt resolution of the case.
The IBP-Pampanga also urged their members to pray for the speedy recovery of Rueda.
Maglalang said the IBP is now studying the possibility of arming all lawyers in the country to protect themselves from any attack. ●Elaine Mercado

Pineda trusts new Pampanga cops chief
CITY OF SAN FERNANDO – Gov. Lilia Pineda on Monday expressed confidence and trust to the newly-appointed provincial police director and urged the 1,028 members of the Philippine National Police (PNP) in Pampanga to maintain peace and order barely a week before the May 13 elections.
Pineda invited Senior Supt. Oscar D. Albayalde, who was appointed Pampanga police director on April 30, in the meeting at the Bren Z. Guiao Convention Center here with mayors of the 19 towns and Mabalacat City, including Pampanga Mayors’ League (PML) president Candaba Mayor Jerry Pelayo.
The governor also invited the 505 barangay captains and police chiefs in the province.
“I want a gift from you and please give it. It’s not money or material things. I want you to help us ensure a peaceful election,” said Pineda in the dialect in her speech.
Pineda welcomed the appointment of Albayalde, “saying I am happy because he is a native of Pampanga.”
“I am sure Albayalde can speak and work well with you. I am also sure he has innate love and concern for his provincemates,” added the governor.
Albayalde, who was a member Philippine Military Academy (PMA) Batch 86, was chief of the Regional Intelligence Division (RID) before he replaced Senior Supt. R’Win Pagkalinawan last week.
Pineda also lauded Pagkalinawan, who helped lower down the average number of crimes to some 40 percent compared to the previous years.

Pelayo vows to minimize flooding woes
CANDABA — Fourth district congressional candidate Mayor Jerry Pelayo vowed to minimize the flooding problem in Pampanga through proper spending of government funds on flood control projects.
Pelayo said more than P100 million has been used and wasted in various rehabilitation efforts on some section of the Pampanga River.
He noted, however, that most of these projects along the river have collapsed leaving adjacent communities even entire municipalities heavily inundated.
“Kapag nanalo na tayo, ipapatawag natin ang lahat ng concerned agencies kasama ng lahat ng mayors para planohing mabuti ang lahat ng gagawing proyekto sa Pampanga River,” the mayor added.
He said part of the priority development funds will be allocated for the purchase of heavy equipment to be stationed in every municipality for the construction works and maintenance of the river.
He promised to closely work with the Provincial Government through Governor Lilia Pineda, in addressing the looming needs on flood control and mitigating projects in the fourth district.
