The grape likes a soild made up of gravels and limestone to grow well and wherever these two are found together, vinyards try their hands at planting Cabernet Sauvignon.

Cabernet Sauvignon is a medium bodied red wine which is not overly sharp or bitter. Most people think of Cabernet Sauvignon as a good all rounder that will rarely be disliked. To put it another way, “Cabernet Sauvignon tastes like what you expect red wine to taste like”.

To change the flavour it is sometimes aged in wooden casks made of oak before bottling. The oak releases some of its own flavors into the wine, adding a depth and warmth to the Cabernet Sauvignon.

If you were asked to describe the flavour of cabernet sauvignon you might say it reminds you of cherries, ginger, herbs and berries with a slight aftertaste of a good cup of tea.

Because Cabernet Sauvignon has such a good base flavour it is often blended with other wines to produce wonderful new tastes.

Which Cabernet Sauvignon to buy?

Try a few bottles of French medoc (the French rarely list the grape variety on the bottle, but most Medocs are either Cabernet Sauvignons or Merlots) and then try some Chilean Cabernet Sauvignon. We really like what they are doing in Chile with this grape variety. The price doesn’t seem to be a good indicator of quality. Its all good when it comes to Chilean Cabernet Sauvignon.

South Africa produces a robust Cabernet which is not to everyone’s taste and Australian Cabernet Sauvignon rarely reaches the high standards of Australian Chardonnays. New Zealand produces some excellent Cabernet Sauvignon in small quantities and quite a lot of fairly bland stuff. Stick with France and Chile when ‘discovering’ Cabernet Sauvignon for yourself.
