The most obvious catalyst was the miniature Domaine Guffens-Heynen of Vergisson, run by the wine¬making firebrand Jean-Marie Guffens and his talented vine-grower wife. The previous leader of Pouilly-Fuissé, Chateau de Fuisse, has had to raise its game, but now this area can boast a host of over-achievers.
The recent cycle of popularity, lassitude, and recovery here provides a universal lesson. ln the 1980s few wines were more fashionable, especially in the USA, than the virtually unpro¬nounceable “Pwee-Fwee-say”. As a result producers grew complacent and sold all manner of heavily sulphured, tart, thin whites under this name, at robust prices. By the early 1990s they found themselves with cellars full of unwanted wine. Hence today’s welcome quality revolution.
