Manila Restaurant and Wine Bar discusses Tequila and Rum

Tequila is a famous mexican spirit enjoyed all across the world. Learn here about its history, background and the best examples

Tequila is a blue agave-based sprit made primarily in the area surrounding the city of Tequila in Western Mexico. The agave plant is grown in the volcanic soil in the area and is distilled to make various types of tequila distributed around the world.

Tequila is most often made at a 38–40% alcohol content (76–80 proof), but can be produced between 35–55% alcohol content (70–110 proof).

The spirit has been around since the 16th century when conquistadors from Spain used up their supplies of whisky and brandy and invented a new drink that could be made from the plants of the New World.

* Blanco (“white”) or plata (“silver”) – white spirit, un-aged and bottled or stored immediately after distillation, or aged less than two months in stainless steel or neutral oak barrels;
* Joven (“young”) or oro (“gold”) – is the result of blending Silver Tequila with Reposado and/or Añejo and/or extra Añejo Tequila;
* Reposado (“rested”) – aged a minimum of two months, but less than a year in oak barrels;
* Añejo (“aged” or “vintage”) – aged a minimum of one year, but less than 3 years in oak barrels;
* Extra Añejo (“extra aged” or “ultra aged”) – aged a minimum of three years in oak barrels. This category was established in March 2006.

The Top 3 Choices

If you want to taste the best of the best, go for the añejo category. It won’t be cheap but faithful tequila drinkers will stand by complexity and better flavour of this category of the drink.

1. Patron Aneja, £50 – One of the most popular brands in North American and becoming well-liked in the UK this has a smoky peppery taste with a pleasant smoothness followed by a great buzz.
2. Tequila Ocho 2007, £44 – Made from agave grown on a single estate, meaning a limited production, this has a lightly citrus, vanilla, honeyed nose with bursts of green pepper and menthol flavour. It is also the first vintage tequila.
3. Partida Tequila, £60 – Not a cheap option, but the ageing process really brings out the vanilla and citrus flavourings in this spirit. The goldon colour and well-crafted bottle will look good in any drinking cabinet. Only to be served to the most important dinner guests.

How to do a Tequila Slammer

Ask the bartender to provide you with a packet of salt and a slice of lemon. Balance this along the top of your hand from the curvature of the thumb to the forefinger. Lick the salt up first then immediately take the shot of tequila. Follow this up by biting down on the lemon slice. Remember, tequila is a heavily alcoholic spirit so enjoy responsibly.
