Several everyday cheeses were paired against a NV Sparkling Rose Sec Ch. De Montgueret Saumur brought out from Yats Wine Cellars Clark Philippines. This is the result of the pairing.

The jury is out and here is the verdict of the tasting of the NV Sparkling Rose Sec Ch. De Montgueret Saumur against these cheeses:

Asiago (Young): This was a good match in both weight and texture, so the initial impression was favorable. However, it didn’t do so well in the finish when the cheese proved to be just a bit too rich for the wine.

Edam: This pairing didn’t work because the Edam lacks the flavor intensity to match the wine’s.

Saint Paulin: worked very well, the slight sweetness of the Rose Sec really helped wake up the cheese and the round texture of the wine married well with the same texture of the cheese.

Raclette: this didn’t work at all, the cheese was too heavy and rich for the wine making the latter almost irrelevant in the matchup.

Camenbert: the dullness of the cheese gave the Sparkling Sec the whole stage but even though there was no clash, it wasn’t much of a pairing either.

Gouda: Pretty good result but not spectacular, with both food and wine going their separate ways, not really arguing but certainly not conversing, so it was an acceptable but not recommended pairing.

Gruyere: Just ok, nothing to really get excited about, no synergy but not a clash either.

The recommended pairing out of the cheese for this pairing were Saint Paulin and Asiago.
