Due to unfriendly weather this week, this Wine and Cheese Tasting Event has been postponed to the Friday of the the following week. We apoligize for any inconvenience caused and hope to see you all at Yats.

Menu for Wine and Cheese Tasting at Yats

 
 

Five flights of cheese will be served at 15-minute intervals staring at around 7pm.
Three rounds of wine will be served to enjoy with the cheeses, a white wine for the first two flights followed by a red wine for the next two, ending with a fine tawny port with the final flight.

Flight No. 1
Havarti
Denmark’s most famous cheese, Cream Havarti, also called as Havarti or Flødeis Havarti (in Danish) is a deliciously mild, very creamy, natural, semi-soft cheese. This interior-ripened cheese is aged for around three months. The cheese has tiny holes throughout the paste with cream to yellow in color. The cheese can be mild to sharp in flavor and buttery depending on its aging. The Havarti is different from Cream Havarti. Havarti is made from high-pasteurized cow’s milk. Cream Havarti, is prepared by the same original recipe but is enriched with extra cream. Cream Havarti usually ripens very little and has a smooth texture.

French Brie/Camembert
Camembert is a soft cows’ milk cheese with a furry white rind speckled with beige, and a creamy, pale interior which becomes increasingly yellow as the cheese matures. When fully ripe, Camembert has a pungent, strongly-flavored and runny interior somewhat similar to the milder Brie.

Red Leicester Cheese at Yats Restaurant in Clark Pampanga

Red Leicester
Red Leicester, formerly known as Leicester or Leicestershire cheese is a traditional hard English cheese made from unpasteurized cow’s milk. It is similar to Cheddar but much moister, crumblier with a milder flavor and it matures faster than cheddar. To set it apart from cheddar and highlight the quality of cheese, Leicester is colored with a vegetable dye called annatto. The rind is reddish-orange with a powdery mould on it. The color indicates that the milk used has a high cream content.

English Mild Cheddar Cheese
A popular cheese that originated in the village of Cheddar, England. A firm, cow’s milk cheese that ranges in flavor from mild to sharp and in color from a natural white to pumpkin orange. Cheddars vary in flavor depending on the length of aging and their origin. As cheddar slowly ages, it loses moisture and its texture becomes drier and more crumbly. Sharpness becomes noticeable at 12 months (old cheddar) and 18 months (extra old cheddar). The optimal aging period is 5-6 years; however, for most uses three-year-old cheese is fine and five-year-old cheddar can be saved for special occasions.

Blue Cheese Served at Yats Restaurant in Clark Pampanga

Blue d’Auvergne
Bleu d’Auvergne is a name-protected (Denomination Origine Protected, DOP) cheese from the Auvergne region in south-central France, where it has been made since the middle of the 19th century. Bleu d’Auvergne is made in the traditional manner from cow’s milk and features blue veining throughout. Its moist, sticky rind conceals a soft paste possessing a grassy, herbaceous, and (with age) spicy, pungent taste. If Roquefort is the assertive ‘King of Blues’ then our even-tempered Bleu d’Auvergne is the prince. Though both were developed early in the 19th century, are currently AOC protected, and made with a similar recipe, the difference lies in milk type, region and intensity.
